The Chicks Hatch! - Four new tanks opened!
Mar 07, 2021
Along with warmer and lighter days, the animals at B&B HQ are reminding us of the time of year - the chickens produced a batch of fluffy little chicks and the sheep are getting ready for lambs next month.
It’s always exciting when the time comes to open and test new batches of cider. We have just cracked open 4 tanks from our 2019 pressing season, each one having been long matured to the point where all yeasts have been exhausted and the cider is bone dry.
We take a sample of each, adding measured quantities of sugar to give us a range of sweetness from dry through to medium sweet. The diverse flavours and complexities of each batch have differing requirements – it is through this testing process that we reach a point where each cider ‘tells’ us what it needs to reveal its greatness. Testing sessions tend to be best achieved on a nice sunny afternoon and we advise walking home afterwards rather than driving!
Hope is building that festivals and events will be back for the summer, we have started to map out those we could potentially attend and have made our first booking for the Bentley Weald Woodfair in September – we would love to see you there!
We hope you enjoy this month’s selection. You can find all the details about each cider on the website, as well as the link to our shop: www.Bignoseandbeardy.com.
Wassail!
